1 1/3 c flour (can use half whole wheat)
1 1/2 t baking powder
1/2 t salt
3/4 – 1 1/2 c crushed ripe bananas (2-4) (can use papaya for part of banana; or replace 1/2 cup banana with 1 c diced, seeded orange, grating peel first. For blueberry/banana: 2 bananas, 1 c fresh blueberries)
2/3 c sugar
2 large eggs
1/2 c oil
1/2 c walnuts or sliced almonds
1 t blackstrap molasses
2 t vanilla
1 T lime juice
1/3 c shredded coconut (optional)
1/3 c chocolate chips (optional)
Mix first 3 ingredients thoroughly in one bowl and the remainder in another. If making muffins, spray bottom of muffin inserts with cooking oil spray. Combine and bake immediately at 375 for 25 minutes or until muffin top springs back when pressed (for bread, when inserted butter knife comes out without liquid batter). For banana bread, bake at 350 for about 40 min.
Makes 12 muffins (with batter to near top of muffin cups) or two loaves.
