Muffins

2 eggs

¾ cup sugar

½ – ¾  cup grated or pureed    – fruit or vegetable

¾ cup oil

1 tsp. vanilla

¼ tsp. other extract – optional

Mix above until smooth.

 

Combine in separate bowl –

1 ½ cups whole grain flour

1 tsp. baking powder

– optional add to dry part

¼ cup cocoa

¼ cup blueberry powder

1 tsp. cinnamon

½ tsp. ginger

 

Add dry to  moist; mix well, then, if desired, add –

¼ cup chopped nuts, coconut, chopped cranberries, etc.

375 degrees Fahrenheit

15 – 20 minutes
