Spanish Rice

white long-grain rice
onion, diced
chicken broth
tomato sauce (or 1/4 c water, 1/4 c paste)
ground cumin
salt
cubed chicken (optional)
Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. Add onions and cook until tender. Add remaining ingredients, bring to a boil, then reduce heat and simmer, covered, 20-25 min.
